Three massive egg yolks
2 cups (four hundred g) sugar, divided
three tablespoons cornstarch
1 teaspoon vanilla extract
1 ½ cups (360 mL) milk
½ cup (115 g) unsalted butter, 1 stick, softened
1 large egg
3 ½ cups (435 g) all-reason flour
